Basic Brownie



This is my go to sweet treat recipe. If we've finished dinner and Henny is in bed I can make this in less 10mins!

This recipe came from my sister Natalie and I have no idea where she got it from so I have no one to credit it to! 

Ingredients

1/4 cup cocoa
1 cup sugar 
125g melted butter
2 eggs
1 tsp vanilla essence
1 cup flour
1 tsp baking powder
1/2 cup chopped up chocolate pieces

Method

Preheat oven to 180c.
Line a slice tin with baking paper.
Mix butter, sugar, vanilla, eggs and cocoa.
Stir in flour baking powder and chocolate.
Bake for 30mins at 180c.

This is delicious as is or serve it with ice cream for dessert, it's extra good in the morning with a cup of tea after a 5am wake up!

Vegetarian Quesadilla 





At all times there are the two crucial ingredients in my pantry to make these - tortillas and black beans. If I am in a funk and forgot to take something out of the freezer or I didn't make it to the supermarket that day I know I can always make these.

These are delicious and you can kind of just use the recipe as a base and add what ever you want to them or on top once cooked.

Ingredients

1x packet of Tortillas (6pk) 
1x 400g can Black Beans ( I use the organic ones)
1 tsp Cumin powder
1/2 tsp Chilli Flakes ( or more if you want)
1 - 1.5 cups grated cheese
Optional additions chopped capsicum, cooked chicken, red onion, mushrooms, spring onion.


Method

Drain off the black beans in a sieve.
Add the black beans to a bowl and squish these up with your hands.
Then add in the cheese, spices and what ever else you would like to the bowl and squish these all up again with your hands.
Lay flat 3x Tortillas. Divide your mixture in to three and squish flat on to the tortilla, not too close to the edges. Then place another tortilla on top.
Get a pan nice and hot with some cooking oil in it, once hot add a tortilla to the pan and cook till golden on one side then flip and cook the other side.
Let these cool a couple of mins before you cut them open to let the cheese set a bit. 

We like to add a salad with a bit of balsamic vinegar and coriander on top of ours.

For the Love of Food

 I'm a new Mum to an awesome 5month old little boy named Hendricks! Becoming a Mum is a crazy, emotional, amazing experience! I love to look after people and having a new born baby and not being able to look after people in the form of cooking food was such a hard thing for me to deal with. I wanted to be able to cook dinner so I could feel a sense of normality in my crazy new life. But when you have a new born stuck on your boob at dinner time you just have to give in and let your other half help out. Matt was great, I could talk him through meals and we made it work. But I needed to get back in the kitchen ASAP! 

I plan on giving you guys some easy meal inspirations that don't involve too much thinking, where you can add this or that and nothing is too intense or technical.

I'm a total geek when it comes to dinners in our house and I know exactly what I'm cooking each night as I make a meal planner and stick it to the fridge. Fucking geek. I know, right? But we live 25mins from the supermarket and the last thing I want to do is use my brain when I'm hungry at dinner time.
